Cinco de Mayo is a holiday that commemorates the Mexican army's victory over the French at the Battle of Puebla on May 5, 1862, when a poorly equipped and outnumbered Mexican army successfully defended the city of Puebla against a larger French army. The victory became a symbol of Mexican resistance and national pride.


Today Cinco de Mayo is a popular holiday in the United States, where it is often associated with Mexican-American culture and heritage--and delicious Mexican food. I thought it might be fun to learn a little bit about tacos and discover some great local spots to enjoy them!

I thought the street taco was the most authentic version of a taco. But while street tacos are a popular and beloved style of taco in Mexico, it is important to note that there is no one "authentic" type of taco. Tacos vary widely in their ingredients, preparation methods, and regional variations.


What's the most popular filling for a taco?

Ranking at the top of the list of the most popular taco worldwide is the "al pastor" taco. Al pastor tacos are typically made with marinated pork and served on a soft corn tortilla with diced onions, cilantro, pineapple, and a squeeze of lime. The marinade gives the meat a sweet and tangy flavor.
